In a large bowl, toss pineapple, orange, kiwi, grapes and strawberries. In a small cup or bowl, combine lime zest, lime juice, honey, poppy seeds and 1/4 cup pineapple juice. Stir well and toss with fruit.
Yogurt with Toasted Buckwheat, Mint, Berry, and Pomegranate Salad
1.5 cups Greek yogurt
1 cup strawberries
1 handful fresh mint leaves
1/4 cup toasted buckwheat kernels
1/4 cup pistachio nuts
1/2 cup pomegranate seeds
1 tablespoon lemon juice
2 tablespoons honey
1. In a small bowl combine the chopped strawberries, mint, buckwheat, pistachio nuts, pomegranate seeds, and lemon juice. Toss gently.
2. Divide the yogurt into two serving bowls.
3. Top with the berry and pomegranate salad. Finish with a drizzle of honey or maple syrup. Serve immediately.
The Caveats
Although fresh fruit salad has a bundle of nutritional benefits, it should be eaten in moderation. According to CNN.com nutrition specialist Dr. Melina Jampolis, fruits have about three times the calorie count per serving as most vegetables, so they can cause unwanted weight gain if you eat significant amounts of them. Fruits are also higher in sugar than most veggies, whole grains and lean proteins. As long as you stick to about 2 to 2 1/2 cups of fruit per day, however, you’re probably not at risk of gaining weight from fruit. If you do have any concerns about fitting fruit salad into your diet, discuss them with your doctor.

Dice up half a watermelon and throw it into a large bowl.
I did knock on this watermelon at the grocery store before I bought it for two reason,
1. I love to embarrass my kids.
2. To hear if if sounds hollow. Someone told me once if you put a watermelon up to your ear, knock on it and it sounds hollow it’s ready to eat. I don’t know what the logic is behind this theory, but it works every time.
Wash up some green grapes…
and throw those into your bowl.
Now slice up some pretty strawberries…
and add those into your bowl as well.
Last but certainly not least dice up a couple of granny smith apples…
and put them into your bowl.
I love granny smith apples. They are tart, crisp and you don’t have to knock on them to see if they are ripe.
Here is my favorite part, the white wine simple syrup.
Regular simple syrup is just equal parts water and sugar boiled together until the sugar is completely dissolved and …well… a syrup is made! I figured if plain ol’ water made a nice syrup, white wine would make an even better one!
I was right.
In a small sauce pan combine 1 cup of sugar and 1 cup of white wine.
Whisk and boil this for about 5 minutes until all of your sugar is dissolved and it has thickened up a bit.
Taste it! You might not want to add it to your morning cup of joe, but it’s pretty stinkin good on a fruit salad.
